| Vinification | Grapes transported in traditional wicker basket. Manual crushing without destemming. Fermentation in a mill with treading on foot. Indigenous yeasts. Stop fermentation with 77% grape brandy. Internship in barrels and rafts over 100 years old. Bottling on the farm, without gluing or filtration. |
| Test Results | They are excellent at table with a wide variety of cheeses: the classic blue cheeses (Stilton, Roquefort, Gorgonzola or Cabrales) and the Portuguese Serra, Azeitão, Islands (São Jorge and São Miguel with 7 or more months of ripening), Amarelo da Beira Baixa, Serpa, Nisa. In desserts, chocolate provides many excellent preparations. |
