The maturation of Hibiki 12 years takes place in a set of barrels of different characteristics. Barrels that previously contained Bourbon whiskey and Spanish Jerez wine are combined with those of Japanese oak - known as mizunara - that previously aged Umeshu, a traditional Japanese plum liqueur. This makes it very attractive for those who appreciate the sweetest and most floral whiskeys.
